It's November and I have an abundance of this in my still-growing garden. Kept an eye on the weather all day and dashed out just before dark to pick a big bag full for Jacob and some (too much!) for myself.
It seems that what I can see from your photo that you might have two different plants...but I think that that pak choi and bok choy are just two different ways of writing the same thing...sort of like Peking and Bejing...transliteration in action perhaps?
Im thinking that you might want a big bunch like celery that would take longer to grow and maybe thin the plants a bit to give them room to form into stalks. You really should do a FOOD BLOG for the Seattle area. I think there are so many people who would love to follow you along in your expert knowledge of FOOD.
